A calibrated sculk sensor does not recognize a player who drinks in survival/adventure mode but it recognizes a player who drinks in creative (screenshots in attachment).
As you can see on the screenshots, the "end of an interaction" is recognized at redstone power 3 for any gamemode but the "drinking" interaction is recognized at restone power 8 only in creative mode.
I also tried the "eat" interaction but this one is recognized in any gamemode (so no problem here).
