When you have traded with a villager such as Librarian and when you break the Workstation like Lecture and put a different workstation in front of them. They won't change their jobs as they keep the previous jobs. They even don't lose their jobs when breaking their workstations.

Steps to reveal

Find a villager with job or create one. Trade with him and break his workstation. Place a different workstation in front of him. Open the trading GUI. You ill find he doesn't change the job.(Tested in jungle and plains)
