After preforming the workaround for the missing ender dragon and portal bug, I respawned the dragon, and the particle effects pointed to spaces in between or behind the existing pillars, as if the pillars were in the wrong places. Additionally, it appears that because the place the particle was pointing to wasn't a bedrock block, the crystals exploded immediately, so the dragon was not healed at any point in any fight.
