When using /execute if block ~ ~-1 ~ minecraft:stone run give @s minecraft:cookie you should get a cookie when standing on any kind of stone (including andesite, granite).
But those wildcard state selections don't work. You only get the cookie standing on stone[variant=stone] (the default state).
