Chicken texture is weird
This only happens when fancy graphics are ON.

No textures or mods . Yes bottom layer is also dark. Yes possibly related to shadow because this bug does not occur when "fancy graphs" is disabled.

It looks like the shadow shading is being applied to the top layer of the mob's model. Can you see if the bottom model layers are shadowed or bright?

I can't reproduce this. Can you please add any more details? Can you confirm that you are not using any texture packs?

Confirmed. It also affects wolves and ocelots.
