I expected that hitting backspace on the keyboard while typing in a sign would cause the letter to be backspaced and then I could continue typing lowercase letters.
Describe what you thought should happen here

Instead, when I hit backspace, my keyboard, regardless of if the character I had backspaced was capitalized or not, would automatically activate shift, so that, unless I hit shift again, the next letter I typed would be capitalized.

I was typing in a sign, hit backspace and found that, annoyingly, the character I typed was pseudo-automatically capitalized, because the shift key was automatically activated by the backspace.

1.) Enter a creative world
2.) Place a sign
3.) Begin typing in the sign
4.) Hit backspace within the sign on letters you just typed
The keyboard should auto-hit shift.

I'm not sure I understand exactly what you're saying; either way, it's annoying when you're trying to write on signs and you mistype.

Yes, and since the sentence is not relayed back to the phone, the keyboard doesn't know better. This is the same issue that affects gesture keyboards.

Yes, but that's only at the beginning of a sentence or after back spacing a capital letter, this does auto shift on every character backspaced, regardless of whether or not it is capital or beginning a sentence.

Standard keyboard behavior for most iPhone keyboards.

Confirmed, this issue has to be fixed, because it happens for me too on the iPod Touch 5g
