I recently played with a friend in minecraft bedrock beta 1.17.30.20 and we encountered a village farm which the water from it turned into an upside down copper stairs; not long after the doors turned into glazed terracotta and magenta wool from each respective two blocks although the blocks were not consistent as another door of the same type changed into gray and black wool. Interacting with blocks seems to change the blocks too as when I did anything under water the water changed into copper strairs in diamond formation and I was unable to move being trapped inside it. My friend did not see anything unusual and can swim through copper stairs and walk through black wool while I was not.
Tl;dr
-any update to a block reacts to changing into a different block
-breaking blocks result in mis-matched particles
-what the blocks are changed into to are not always consistent but sometimes they are
-some blocks changed "naturally" others are a result from update
-the blocks are solid
-occurs in my friends world but not on my own
-I have downloaded mods
-friend experienced world normally while in his world
