Villagers will randomly change trades or change offers after they've been traded with and upgraded to level 2, 3, or 4. Their trade and offers should be locked.  This only seems to affect villagers that have been bred in 1.16 and are more than 2-3 blocks way from their occupation block and in a minecart.
