When syncing/migrating a world from the old XBox One Edition (Legacy Console Edition) all available trades of all villagers are replaced with new trades. Even those frequently traded before.
Steps to Reproduce:
- Create a world with the XBox One Edition (Legacy Console Edition)
- Find a village
- Trade with the villagers to unlock many trades
- Open the Bedrock Edition and sync/migrate this world
- Compare the available trades of the villagers
Observed Results:
- All available trades of all villagers are replaced with new trades, even those frequently traded before; additionally the level of all villagers is set back to 1
Expected Results:
- All trades should be retained to be the same as before when migrating the villagers to villager_v2 if you have already traded with the villager

When syncing/migrating a world from the old XBox One Edition (Legacy Console Edition) all available trades of all villagers are replaced with new trades. Even those frequently traded before.
I found the information these should be retained when migrating the villagers to villager_v2 if you have already traded with the villager. (https://minecraft-de.gamepedia.com/Handel#Funktionsweise ; sorry, I did not find the information in the english version)
When syncing/migrating the information if a villager was traded with or the count of available trades should also be tacken into account.
If that is not possible I think it won't do any harm if the trades of all villagers present in the old world would be retained.
