The Zombiefies Pigmen still have the original Pigman texture from prior to 1.16 on my version of the game. I played snapshot versions via the xbox insider program and had no issues then with the texture of the mob

When also selecting the mob through the block picker key and looking at it, the spawn egg is for the zombiefied piglin as it should be although the skin is still of the original pigman
