      Summary
      Piglins will not switch their weapons to a better one.
      Piglins with crossbows will not switch to an enchanted crossbow, while piglins with golden swords will not switch to an enchanted golden sword. All they will do is inspect the golden sword and put it in their inventory.

      How to reproduce:

      1. Spawn a piglin
      2. Give it an enchanted crossbow/golden sword

      -> It picks it up but doesn't equip it
