This issue or "bug" seems to arise when trying to create multiple signs that have the maximum number of characters within the same game as far as I can tell.
I use various symbol icons (====; ^^^^^; or ********) - and combinations thereof, as borders for the top and bottom of many signs in one of the project worlds I'm creating which tends to fill out their character limits per line.
The issue arises (and I can't pinpoint what date I began noticing exactly, due to a personal hiatus), after making the 1st sign with full text and then attempting to place another. If you make a typo on that second sign, I have found that the text cursor is non-responsive for the [Backspace] key. It seems you can still continue to type erroneous text, but in order to undo the mistake you must smash the sign and begin from scratch.
There also seems to be some unusual lag that occurs whenever typing text at a fast pace, be it on a sign, while naming an item, or filling out the functions of a Command Block. It seems almost certain that the two are unrelated, but I feel I should point out that even the little minutia changes to sign and text editing within the game go over extremely well (It has gotten much better!). The lag is attributable perhaps to the computer I'm on (though it's not exactly bare minimums either), as well as perhaps some other factors that I don't have the gumption to speculate on just now, but the [Backspace] key rendering itself unusable from time to time has been an annoyance to say the least, though I certainly don't mean to blow it out of proportion since on such a small medium it's still relatively easy to have templates on hand that one can pretty easily determine will fit and look nice without having to mess with your sentence structure or have confusingly broken lines all besetrewn about.
