ervery time i run my minecraft Wold all my Horse have a wrong Max heakth displayed, at last i belive so, and wan i do go fare way to unloade them an come back, thay atlast show a difrent health
On the Clip you can see at the begin the 2 Horse in the Stable one Starts with one line Harts +3 and the other with one line +4,
and the onter two at the back on do have online + 1/2 and 2 emty hearts?
an after unlode the chunk an com bach the firsth 2 have one line + 4 & 5 now and the other at the back have one now only one line of Hearts and the othe rone line and 2
and its the same witrh New breeded Horses that thay have a difrent amount of Hearts until it is unloaded und relodet....

but my Original horse is perfectly fine but that is an unbreeded 1.16 hose tamed from the wild..

on sugettion: could be that it is a problem related to breeding and the passed down stats or so...
