Summary:
Sculk sensors are not activated upon interacting with dragon eggs.
Java report about this issue MC-225024.

Steps to reproduce:

1. Place down a dragon egg.
2. Place a sculk sensor nearby.
3. Interact with the dragon egg so that it teleports away.

Observed results:
Sculk sensors are not activated upon interacting with dragon eggs.

Expected results:
Sculk sensors would be activated upon interacting with dragon eggs.

Notes:
They do however activate it upon landing on the ground.
