Context: The iPhone 13 Pro & iPhone 13 Pro Max have been out for many months now. Both of these devices have a powerful mobile processor and a 120hz screen. The iPad Pro series, also with a 120hz screen, can play Minecraft at 120FPS.

Issue: Frame rate is still capped to 60FPS on iPhone 13 Pro series Minecraft. Disabling V-Sync has no effect. There is no reason why this cannot exist.
