Java Edition 1.17 fixed MC-199242, which meant that as a result, the planes constituting crop models would display their texture the same way regardless of what angle you looked at the plane. This has been the case in Bedrock Edition for a long time, but it is implemented in an different way. The fix for MC-199242 made the crop model planes always use the same mapping for the "outside", maintaining fourfold rotational symmetry and avoiding any odd mirroring effects. Bedrock Edition, however, opts for a diagonal mirror symmetry approach, which results in ugly and unnatural mirroring at multiple corners where planes intersect.
