I trade pumpkins with my villagers. Often, if I have two stacks of pumpkins, one will be traded, the villager will restock, and then won't accept the remainder as pumpkins. If I try to trade directly instead of the left buttons, it says the trader does not want this item.

Note: As far as I can tell, it only applies to this trade, but it happens to every farmer.
