I've many torches in my cave, but sometimes, rarely, it's still very dark on certain odd spots here and there, and such lighting errors could even activate mob spawners. By breaking and placing the torches, the lighting turns into the correct values afterwards. This issue is most commonly encountered after travelling into the nether for a while, then back into the overworld. But it could also be triggered by simply wandering around in the overworld, rarely.
