You can quickly climb water if it is one block diagonally South West of you.

You can recreate this by building a vertical tube with water running down the middle. You can then climb the outside of the tube as if you are quickly swimming up the water. As I said this only works from the North East side facing South West. Mobs can also climb the stream if pushed into the corner.
