I was fighting the ender dragon on 1.16.1 and suddenly it looks like it is freezed, but it behaves and moves around normally (attacks you etc.). I have experienced the same bug with villagers, zombie villagers, skeletons and endermen. It can be fixed by logging out of your world and logging back in, but it happens very often and it is annoying.
