On update to 1.16.100, most of the villagers in my trading hall were not replenishing their trades. I eventually worked out that they were no longer assigned to the job stations in front of them (the bug was occurring amongst librarians).

I moved all of the job stations back to the correct villager. All assigned stations reshuffled AGAIN after sleeping.
