With the Apple Silicon transition, Intel apps on Mac are updating to be either universal or ARM native. With nearly all new Mac models now using Apple Silicon, Intel applications and the Rosetta 2 translation layer (which the current Minecraft Launcher runs through) have little time left.
Updating the macOS launcher to fully support ARM would enable faster startup, better performance, and no reliance on Rosetta 2.
In addition, this support could be extended to Minecraft Java as a whole...there are third party launchers that already compile Minecraft in ARM with minimal changes.
