The Seafood Skewer achievement is not unlocking. My progress is stuck on 80% and I have managed to kill 10+ mobs with a single trident explosion multiple times. My partner has the same issue on her Xbox One X and her progress is stuck on 90%. I have reinstalled the game and cleared my saved, but with no luck. I also noticed via the TrueAchievements website that the last time somebody unlocked this achievement was on the 13th of Oct 2021, a few hours before the last update was released. Not sure if that update might have bugged this achievement.
