You can get multiple pumpkins on your head slot in survival mode. If you have for example 10 pumpkins in a stack, you can open your inventory and shift-click them in to your head slot. Then you have all 10 pumpkins on your head. If you don't shift click them in, you get only one in your head slot, as it should be.
