Summary:

Minecraft does not automatically switch it's sound output to the current default Audio device in Windows.
Disabling the device Minecraft is currently outputting to, while there is another device available, does not force it to swap. Minecraft stops outputting sound altogether.

Example:

I have 2 sound devices, external USB speakers and the inbuilt soundcard/my headphones.
Minecraft will not produce sound if the current device is disabled, unlike normal Windows functionality.

Reproduction:
============
Minecraft is open, sound is outputting through External Speakers.
External Speakers are Enabled, Headphones are not.
Headphones are Enabled.
External Speakers are Disabled.
Only Headphones are Enabled.
Minecraft must now be closed and reopened for sound to output through the Headphones.

However. Even if you don't close and reopen Minecraft, and simply backtrack through the chain, Minecraft no longer outputs to the External Speakers at all. So you have to close the game for it to output anything.
