If I put the proper input into the trading hud of a villager and it displays an output of an item, say trading 1 emerald to get 8 arrows, and then I double click a single arrow in my inventory, the villager trade will be completed up to 2 times, leaving me holding 17 arrows on my cursor, assuming that both trades are valid. If I double click on a stack of 63 arrows in my inventory and the trade is valid, the trade will go through, but I will have a stack of 64 arrows on my cursor and any other arrows that would be received in the trade will be lost.
tldr, if you have a villager trade set up to trade arrows for your emeralds and you double click some arrows that are already in your inventory, the trade will be completed and you might loose some items. this works for other stackable items too.
