Selected "Save and Quit" from the menu while riding a donkey, then reloaded the world to find that the donkey had entirely despawned.

The donkey had a chest equipped which was entirely full of items, none of which were enchanted, and the world was open to LAN at the time. Those are all the specifics I can remember.
