So i was playing on my minecraft hardcore world, when a zombie piglin with an un-enchanted gold sword and no armor spawned in my overworld next to my nether portal, my portal is well lit on the other side so i'm fairly sure he spawned in the overworld and not the nether. i climbed up a set of scaffolds to do some extra damage (maybe 3-4 blocks high) then jump attacked him using my iron sword. when i struck him he struck back inst-killing my player (and breaking my chest-plate i think?). i then used cheats to respawned my player to see if i could recreate the attack so i punched the piglin again with no armor and full health and he did not inst-kill me. when collecting my things i saw my original chest-plate (the chest-plate was a mob drop and may have been at low health but i don't think it was). i know i had no less then 17HP (Calculating for possible fall damage from jump attacking) and protection 2 on my leather pants, yet he was able to still one shot my player having saturation Regen, and 10 Armor Minimum and 17HP. i am resurecting my player using cheats because i'm 110% sure this is a bug, the zombie piglin dropped his sword on death and it had no enchantments.

(Note: It Happened quite fast but I'm almost certain my player was in fact at 20HP when hit, the 17 was conservative in-case I took any fall damage while attacking. Still shouldn't be a one shot kill.)
