Experiencing excessive Lag and Stuttering which occurs randomly while playing Minecraft Java v1.21

Sometimes it happens right away, sometimes it happens after a hour or longer of game play.

It maxes out my GPU at 100% then grinds the FPS down to 1 and starts to fluctuate between 1 - 20 FPS with the GPU use fluctuating between 60% - 100% and continues with this until it grinds the game into a Lock Up, and I'm forced to shut it down via Windows Task Manager.

The problem never occurred while playing v1.19 or v1.20 ... where I would have GPU use no higher then 30% and FPS in the 120+ range.

This issue occurs for me in both single player, and in multiplayer with my wife connected to my world.
