This has been happening since 24w11a for me but it's continued into this version.

Whenever I go so far from the chucks where my island is and go back the mobs freeze. They don't move, they don't make noise, I can't hit them, if they are my pets they can't sit up.
Recently I had an issue though where the mobs weren't walking properly it was jittery, and then suddenly they froze. The area becomes extremely laggy when this happens.
Also when this happens, the blocks also become not interactable. I can break them but they either don't disappear or don't drop their block. Other items like chests and bells can't be interacted with either.
And this has been expanding into other worlds as well. My main world I've been playing for over 100 days in, but I've made a new world and the same issue persists after a few days.

      In response to Jiingy's question.
The only way to reproduce this problem is to just go away and then come back to my chucks in my main world, though in my new worlds that I've tested with, it's sporadic sometimes it takes 2-8 days other times it takes 20-50 days to start acting out.
I've had this world since before the snapshots came out and I only started playing snapshots as of the 24w10a but I've only had problems since 24w11a. If it's not there already there should be a snapshot of the F3 screen within the next couple days (as of this update) along with a video.
