When attaching a lead to an entity, saved components are lost when detaching the lead.
For instance, this command gives you an edible lead:
/give @s minecraft:lead[minecraft:consumable={nutrition:1,saturation:1,can_always_eat:1}]
Right clicking a pig to attach it and then clicking again to detach it returns a lead with no food component.
