No more than 99 items can be set for a container using /item, even if minecraft:max_stack_size is set.

      When using item to set items and quantities for a container's specified grid, the command is not allowed to exceed 64 count, even if max_stack_size is set to 99.

      /item replace entity <player> container.0 with stone[minecraft:max_stack_size=99] 99
