Edit: I do realize that putting a 1.18.2 bug into the 1.20.1 section isn't a good idea, but it was the only option minecraft bug report gave me. So any Mojang staff reading this please change it to the correct category because the platform won't allow me to.

While playing Minecraft recently (most notably 1.18.2), I've found a crashing issue in which my GPU usage starts going down over a period of thirty seconds (Starting about 20 mins on average after I log on to a server) until it reaches zero, at which point it crashes.
While I'm writing this, I've also realized that my disk usage went up to 100% right before the crash.
I've done most troubleshooting available to me, from antivirus scans to system cache clearing to a full reinstallation of minecraft. My GPU and CPU aren't throttling whatsoever as I've lowered in game settings to where they should never reach 100% usage or high temp.
Unfortunately, I did not manage to video the crash. It only happens every few hours, and so I may add it later, however at the time of writing it is already late, and so I will add it tomorrow if I can.
Here's a task manager graph of leading up to the crash. (I took the screenshot before I crashed, so the GPU doesn't go to 0% in it)
