If you fight the ender dragon then die before the dragon dies and enter the end again, the health bar of the dragon is glitched (doesn't move) and when you kill the dragon, the game doesn't open the end portal back to the overworld. If you stay long enough or die and go back into the end, the dragon will respawn.
