Java edition on Debian - objects not showing interactions

      I have a really weird issue running Java edition on Debian. I've been able to use it without issue up until the last few months; I can't say for sure when it started because I don't get to play often anymore due to the arrival of a new munchkin to the family.

      When I first start the game, things seem to go fine. At some point along the way (from a few minutes to almost an hour,) interacting with things isn't reflected in the graphics. Eg., dig a block, it doesn't disappear but I can fall in the hole. Open a door, I hear the sound and can walk through, but it still shows closed. Pick food, it shows up in my inventory and I can plant a new one, but the display still shows the original thing as if I didn't do anything. And...if I wander too far from where I started when I entered the game, stuff isn't rendered, like when you enter a new area too quickly and it takes a bit for things to catch up (only it never does.) It's almost as if the rendering engine stops/crashes along the way, and the stuff that was previously rendered is fine, but any changes aren't reflected. The issue seems to happen the most often on multiplayer worlds, but does also happen on singleplayer ones.

      We have Windows 7 and 11 machines, and they seem to work fine. It only seems to be on my Debian machines. I've gone so far as to rebuild my PC multiple times, and even tried installing on a brand new machine, to no avail. I've also tried the .deb-based installer and the tarball from MS. I've tried umpteen combinations of graphics settings. I've tried using the graphics drivers bundled with the kernel and the non-free versions. I've done numerous Google searches and not found anything that seems similar, but then again, I'm not quite sure how to phrase my search.

      I'm definitely not new to MC, have been playing it on Debian for almost a decade, and haven't had issues until this year. I don't use any mods, etc.

      I'm going to attach a screenshot of me magically floating in the grass - this was taken with the print screen functionality on the Debian machine. My son (on the windows machine) sees me as standing in a hole. When I get out of the hole and he gets in, the view is the same. I'll also attach a screenshot of my son standing in an open doorway - on a Windows machine all looks ok, on Debian it looks like he's magically inside the door.

      I'm not sure where to look, what to try, or how to get any relevant error messages – please let me know what you need from me. However as this is affecting multiple machines (including fresh OS installs,) I don't believe that it's anything that I'm doing.
