This issue has been around since 1.11.2. It is supposedly to do with a faulty NVIDIA driver version 378.49, but I am still having this issue on driver version 497.09.

The game crashes from rendering the inventory of a wandering trader, given that you have a datapack with custom heads installed on the world/server. Simply killing a mob and having it drop the head can sometimes cause a crash to occur as well.

The game starts just fine, and runs just fine, up until the point of needing to render the custom head. That's when it crashes. I've tried an older version, I've tried manual installations of the driver, I even tried a completely unaltered instance of the game - It doesn't seem to matter.
