Cow and sun texture broken in Snapshot 21w43a

So, I wanted to check out the new snapshot and realized that the textures from the cow and the sun are completely broken. I tried in several worlds and they sometimes change the way they look (see images attached). I tried with resource packs, data packs and without them too and nothing changed. All the other mobs seem to look normal as well as the moon!
