Since the 1.17.1 update the OpenJDK Platform Binary program that allows Java to run Minecraft makes it impossible to run the game on an i7 7th gen 16GB RAM configuration. At launch the game takes 100% of CPU while before it was running without any problem. It is now impossible to play it. I can't find any solution on the internet and a lot of players are facing the same problem without any fix yet. I can't run Minecraft with an external Java client either.
