I was setting up a trading hall and, when trading with cartographers who took up the profession in either 1.17 or 1.17.1, the game will seize up. Originally it seemed only to happen when trading glass, but appears to happen with any trade. That said, only with villagers who have a) been zombified then cured, and b) went through curing and then took up professions in the latest versions, though the villagers themselves were bred pre-1.17. Cartographers who took up their profession pre-1.17 can be traded with and not cause any problems, this only seems to affect the newest villagers to be assigned a job.

On the seizing up itself, the player can still move about, and pull up the inventory menu, but cannot interact with the world - all mobs freeze in place, anything thrown from the inventory does not appear on the ground, nor anything on the ground appearing in the inventory. When trying the exit after this state, the game will lock on the "saving world" screen, forcing you to manually terminate java. I had to manually force a crash after triggering the bug to get a crash report, which can be found here https://pastebin.com/2aQ86YCZ
