Old world data suffers from critical bug - it randomly triggers after converting world save to 1.17 (similar issue happend during 1.14). After playing for a while without any issue, interacting commonly with entities and blocks, you try to destroy doors, trapdoors, crafting tables or chests which results in a lag, which makes whole world non-interractable - destroyed block is unpickable, mining other blocks doesn't drop them, every mob freezes, you can eat, but hunger indicator won't fill, flying with elytra keeps you in flying state permanently and doesn't let you use fireworks to get velocity. Tick indicator on debug screen (F3 button) stops.
