The only way to trade with piglins is to right click with them, they don't run towards gold ingots thrown on the ground. I tried a test world and it works, but in my current world that i made at the initial 1.17 launch, it doesn't work. I've made a lot of progress in the world and it's frustrating that I can't easily trade without constant right clicking.
