So, this was on 1.16.1. I am very sorry. I believe Nether Update bugs are still allowed, but the bug tracker did not let me select anything other than 1.17 and 1.17.1.
I was playing Minecraft on easy difficulty in demo mode. As I destroyed 9 pillars the dragon was attacking as normal. I died, respawned, and destroyed the last pillar, at which point I noticed that the dragon was behaving oddly. She seemed to be flying around the center within the towers, making half to three-quarters of a full circle, crossing the center, and repeating.
She did not throw any fireballs. She did not spin around with a circle of dragon breath or perch. She did not circle any pillars, so it seemed that the game understood that all the crystals were destroyed. (Even so, the dragon is supposed to still perch when some crystals remain.)
I attached footage of four minutes of what this looked like, but had to greatly speed it up to fit the file size restriction. Hopeful the lack of any pink breath and fireballs is still clear.
This went on for about eight minutes, until I died and respawned again. After this, the dragon was attacking as usual.
On reddit, someone posted a similar glitch that was also resolved when the player died. Someone also posted a similar glitch to this bug tracker, but it involved a mod. I am not sure the specifics of how this bug can be reproduced – I would have included previous footage for context but could not fit the file size restriction – but I am sure that this is not how the dragon is supposed to behave.
