So I figured out a way to load older versions on the latest snapshot (21w13a) by changing the version tag in the level.dat through NBT Explorer. It crashes Minecraft when I run it on a singleplayer world, but if I run it on a server it works (occasionally the server crashes; usually when I'm going too fast everything just freezes, even though I'm able to move, and I have to manually restart it by closing the run.bat window). However, I've noticed that when chunks that were loaded in 1.16 get loaded the whole game freezes for a moment. This does not happen when newer chunks are loaded (aka chunks first loaded in 21w13a).

I know you aren't supposed to load older worlds yet, but I figured this would be important as I assume at some point we will be able to access them, and this may be something you want to tackle early on.
