Doesn't seem hardware related, however find the server specs below:
(Azure Standard D2ds_v4)
8GB Memory
Intel® Xeon® Platinum 8272CL @ 2.5 Ghz
Linux (ubuntu 18.04)
256GB SSD, (P15) 1100 IOPS, 125 MBps

I'm experiencing common freezes on my multiplayer server, caused by trading large amounts of glass planes with a series of villagers.
There are no external plugins installed, I'm running the vanilla 1.16.5 minecraft server.
I've successfully managed to replicate this issue in a single player world, so I don't believe this is a hardware related issue.
I've seen a large number of similar issues raised, however most of them are being marked as duplicate under ticket MC-130449, a previously resolved issue.
Steps to reproduce:
1. Create a villager hall (I had 9 villagers), separating villagers with a singular block as shown below:

2. Assign cartography jobs to villagers.
3. Trade with villagers until they're each apprentice level
4. Trade glass panes with each villager until they're out of stock (rapidly).
Azure diagnostics
Below, I've attached the CPU usage of the VM over the last 12 hours, CPU usage appears to spike when users begin trading with villagers and we begin to see lag/freezing on the server.

Finally, I've attached the server logs before and during the freezes, and a crash report following the freeze.
