This issue is related to MC-13118.
If you click Multiplayer, then hit escape, it resets the splash text. If you do that with Singleplayer, it does not.
1. Hitting cancel in the singleplayer menu does not reset splash text.
2. Hitting escape on the singleplayer menu does not reset splash text.
3. Hitting back in the multiplayer menu does not reset splash text.
4. Hitting escape in the multiplayer menu resets the splash text.
