Minecraft "Forgets" all its information

      So recently I have been downloading mods (such as optifine and world edit) for minecraft. I'm doing everything correctly but when im ready to start up the game it says its updating. Once it's done updating it gives me the launcher. All my installations are gone (1.7.10, 1.16 snapshots, etc) so I ignore that and hop into the game. All my options were reset back to normal (such as the FOV and music) and when I open singleplayer all the worlds are gone. And in multiplayer none of the servers are there. This happens every once in a while and it's not fun restoring everything. Also I realized I have 2 minecraft folders. One having the info of before minecraft did this and one having the info of it in its current state. I ignored it the first time but it's happened again and I really just want to find out what's going on. I have no idea if it has to do with having 2 of minecraft or if it has to do with my mac. Really confused on what's happening.
