Pressing down on the scroll wheel (pick block on the controls menu) while being in creative mode is supposed to give you a copy of the placed item your are facing. That is not the case with cauldrons that contain any amount if liquid (lava, water, powder snow). They should give you an empty cauldron item, much like middle clicking a non-empty composter gives you an empty composter.
