I ran a test to see what I would catch and am finding Saddles and nametags are not caught after 600+ items caught. Attached screenshot shows the bulk of the catch although 3 stacks of fish were removed. 

The items are very rare in the game. Only 2 nametage and 3 saddles between all players on the realm with 50_ treasure chests found.
