I have had the exact same issue for several months (now on Java edition 1.16.3), where the right click button quite frequently either double clicks or triple clicks.

      • Placing blocks places two or three blocks in a burst
      • Right clicking to open a door/trapdoor rapidly opens and closes it until I do it enough times to get it to stop on the state I want
      • Right clicking to open a chest, creates a half stack of whatever the chest had in its slot at the same cursor position that my mouse was when I right clicked
      • A single right click when mining, will mine out several blocks.
      • This has happened with multiple different wired mouse's. Currently I have a Dell-brand (came with the PC).
      • Using tools can sometimes burst-use the tool
      • Right clicking with a bucket to place a water/lava source, can sometimes place the source and pick it right up again.

I can still play, but when placing blocks like obsidian, I have to only put one of a bunch in its own slot, and place that one, so that the burst behavior doesn't auto place two or three at a time at random.
