In minecraft 1.16.1 when a zombie piglin is anger or has had anger passed onto them, they will remain angry after turning into creative mode. This was found on normal difficulty and was most noticeable with anger passed on by the piglin's ability to pass angry onto other piglin. They would follow you/me trying to hit you still in creative.
